Our Vision is to leverage our expertise in precise fungal breeding to create improved production pipelines for foodstuffs and other products useful to man. We foresee a world where these products might be produced reliably anywhere in a process much akin to brewing and with a far reduced environmental footprint compared to farming-based paths.


Precision fermentation is poised to become a major contributor to meeting global protein demand over the coming decade.

Fungal fermentation is a proven technology used for many years now for high value enzymes such as chymosin . There is a real opportunity to use new advanced fungal breeding techniques to domesticate fungi for the benefit of mankind as we have done extensively already for plants and animal. Our protein pipelines tackle major sustainability challenges and promise superior products that at scale will be cheaper than traditional routes.

The Science 🧬

We domesticate our strains by creating changes at the level of DNA that make them behave predictably and optimise the product yield in our fermentations. Our breeding process uses state-of-the-art technology capable of extreme precision and predictable outcomes. The founder, Andy, is a world expert in this technology. As an example of the precision, one letter in the chromosome sequence can be selected an replaced by another one. In order to produce an animal protein, an animal gene is introduced into our ‘tamed’ strains and, because by the nature fungi are masters at secretion (this allows the process of digesting materials outside of their cells), the protein that the DNA ‘codes’ for is easily recovered from the ‘soup’ that our strains and grown in.

Andy Foster gained his PhD from the University of Exeter in 2000 and has worked in both academic and commercial settings including Exeter University, TSL (The Sainsbury Laboratory) at Norwich, and Betterdairy in East London. He has conduced world leading research in molecular genetics of fungi. He is an expert in next generation Crispr-based fungal strain engineering.
